By level 25-30, I would be decked out in a mixture of Nightingale and Ancient Shrouded armor with Krosis, the Black Star, the Skeleton Key, dragon bone bow and dagger with superb enchantments. I absolutely love thief/assassin, so I would just run around cities robbing everyone blind and going through dungeons with just sneak, a bow, and a dagger. I recommend using Conjuration as a second (very useful) primary school and either Restoration or Alteration as a secondary as well as an excellent melee/tank follower.
